This coffee continues Zest’s fantastic relationship with El Vergel Estate and Shady & Elias Bayter. Our relationship’s first coffee’s were a huge hit with the Special Reserve series highlighting their Koji processing. Now, we are excited to release more of their awesome creations. The Bayter’s have named this lot Guava Banana for its red fruits and high sweetness profile and creamy and full body.
This coffee was processed through an anaerobic controlled temperature fermentation for 48 to 60 hours taking close control of the PH levels. This was followed by an intermittent drying process involving a series of stalls in different moisture levels to enhance complexity. It is finished in silos to obtain accurate moisture of the beans and then stabilized for 45days to homogenize the beans and promote complexity to the profile.
The Red & Yellow Caturra is one of the flagship coffees produced at El Vergel Estate. Interestingly, the plants are surrounded by Guava trees. This plantation of more than 40,000 Red & Yellow Caturra trees were planted in 2016 and 2018 and enable El Vergel Estate to experiment with processing bigger lots.
