LAS LAJAS
Oscar and Francisca are third-generation coffee producer’s where coffee is their heart and soul. The couple are committed to quality and innovation, and are among the very first farmers in Costa Rica to produce Honey and Natural process specialty coffee. Las Lajas now own 8 farms to cultivate their coffee: Alajuela, Calle Liles, Calle San Juan, Los Pinitos, Sabana Redonda, Sabanilla and San Luis. Las Lajas is what is known as a ‘micromill’, where they operate their own processing facilities.
FINCA CALLE LILES
This lot is grown on Las Lajas’ Finca (Farm) Calle Liles which is situated in the Central Valley region of Costa Rica. Central Valley is the heart of Costa Rica’s coffee industry. With high elevation, consistent weather patterns, frequent rains and volcanic soil, this region enables Las Lajas to offer a wide range of coffees. Finca Calle Liles is situated between 1400 and 1600 meters above sea level, where the harvest season is between December and April.
BLACK DIAMOND NATURAL PROCESS
This is a special natural process with an intentional curing process, with drying taking between 15 to 22 days. The process begins with rigorous harvesting standards, sorting and then drying of raised beds for one day. The beans are then moved to drying patio’s. This period is slower than a usual natural process meaning a slower dehydration of the coffee. The aim of this process is to create a sweeter, clearer and brighter final cup. However, careful attention must be paid to the temperature of the coffee as the coffee is exposed to the elements for longer periods of time. For this reason, the temperature of the beans are constantly checked and moved around as needed.
VILLA SARCHI
This varietal is a naturally occurring dwarf Bourbon mutation discovered in Sarchi, Costa Rica.
